For the Marinade
  • 1/2 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon salt
For the Pork Chops
  • 2 tablespoons olive oil divided
  • 4 boneless pork loin chops 5 ounces each
For Cooking
  • 2 medium onions chopped

  • Hot cooked noodles
  • Sliced green onions

Method
 

  1. Mix pineapple juice, brown sugar, cider vinegar, and salt in a bowl.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Brown the pork chops on both sides. Remove the pork chops from the skillet.
  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Sauté the chopped onions over medium heat until they are tender.
  4. Add the pineapple juice mixture to the skillet with the onions. Bring to a boil, then reduce the heat and simmer, covered, for 10 minutes.
  5. Return the pork chops to the skillet. Cover and cook until a meat thermometer inserted into the pork reads 145°F (63°C), about 2 to 3 minutes.
  6. Let the pork chops stand, covered, for 5 minutes before serving.
  7. Serve the pork chops over hot cooked noodles, if desired. Top with sliced green onions.
